    Farm Story

    This lot comes from a small-scale farming community in Simonesia, located in the Caparaó region, often referred to as Matas de Minas (Forest of Minas Gerais). The community is led by brothers José Cláudio and Creonisio Cláudio, who work to unite local farmers under a shared vision of sustainable coffee production.

    Simonesia was established in 1855 by settlers who recognized its abundant water sources and fertile soil, making coffee production the region’s primary industry. For generations, families in the area have dedicated themselves to coffee cultivation, placing a strong emphasis on preserving the region’s rich natural environment for future generations.

    The Caparaó region is defined by its steep mountains and diverse microclimates, creating unique growing conditions. The humidity level is relatively high, yet still suitable for natural processing. However, due to the slow drying process, coffees from this region tend to develop a brighter acidity compared to those from other areas.

    In collaboration with FAF (Fazenda Ambiental Fortaleza), the producers utilize a mobile cupping lab at the harvest site, allowing them to evaluate their coffee and refine their drying techniques. Since humidity levels can rise to nearly 70%, they continue to research the most effective drying methods for their environment to ensure consistent quality.
